Quick Vegan dinners for whole family
Quick Pasta Dinner
(great for kids)
Veggie Pasta bowties (or any pasta)
boiled edamame
chopped red bell pepper
Sauce
1.5 T tahini
1 T liquid aminios
1.5 T olive oil
Boil pasta as directed with a pinch of salt and dollop of oil
mix sauce in small bowl.
when pasta done drain, mix in sauce and chopped peppers to taste.
let kids peal edamame to add into the pasta
enjoy!
Odds and Ends Vegan Pasta Salad
Pasta (I used veggie spirals)
basil
sprouts
tomatoes
brocoli
avocado
chopped garlic
olives
mixed greens (salad mix/kale/chard)
Sauce
1.5 T tahini
1 T liquid aminos
1.5 T olive oil
cool pasta
steam broccoli for 7 mins or so in a small amount of water covered
make salad with greens, olives, garlic, chopped tomatoes, sprouts and basil,
after drain pasta and broccoli add sauce to pasta
for picky eaters serve broccoli with a bit of aminos seperate from pasta.
otherwise mix all together and enjoy warm or cold
Rice and Lentils dinner
1 cup basmati or any brown rice
1/2 cup red lentils
3 cups water
salt
oil
lettuce
chopped tomatoe
1 T miso
1 heaping T of ghee or earth balance butter
1t tumeric
add rice lentils and water to cooking pot with pinch of salt and dollop of oil. let boil, then reduce heat and cover.
Cook for 30-40 mins, until steam starts to come out to let know rice is cooked.
add turmeric, miso and ghee to rice, mix well.
serve over lettuce and tomatoe
