Vegan Cheesy Kale Salad

As we anticipate the warmth of spring and summer, this kale salad is a perfect fit.

Well massaged and tasty as well.

Adapted from Glow Flow Chefs

INGREDIENTS

  • 10 big handfuls kale, torn into pieces or buy a bin of baby kale
  • 1 tablespoon olive oil
  • 1 1/2 avocado, diced (optional)
  • 1/2 yellow or orange bell pepper, diced
  • 1 lemon, juice
  • 1 1/2 tablespoons Braggs liquid aminos or coconut aminos
  • 1/2 cup nutritional yeast
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons pumpkin seeds or hemp seeds
  • salt and pepper to taste

INSTRUCTIONS

  1. Place torn kale in a large bowl
  2. Pour olive oil on kale and add avocado (if using). Massage oil and avocado into kale until the kale softens and has a dark green, shiny tint.
  3. Add diced bell pepper.
  4. Add the lemon juice and aminos and toss.
  5. Add nutritional yeast and cayenne pepper and toss again.
  6. Top salad with pumpkin seeds or hemp seeds.
  7. Enjoy!
