Maple Sweetened Banana Muffins

Ingredients:
1/3 cup melted coconut oil or safflower oil
1/2 cup maple syrup or honey
2 eggs at room temperature or flax egg substitute
1 cup packed mashed ripe bananas (about 3 bananas)
1/4 cup milk of choice (I used coconut)
1 tsp baking soda
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp cinnamon
1 3/4 cup of gf flour
1/3 cup of oats
optional: chopped walnuts or chocolate chips

Preheat oven to 325 and grease or line muffin tins.
Whisk oil and maple syrup or honey. Add in eggs and beat well. Mix in mashed bananas and milk, followed by baking soda, vanilla, salt and cinnamon.
Add flour and oats, mix with large spoon until combined, add optional ingredients if desired.
Divide evenly into baking cups and bake for 23-25 minutes.
Place on cooling rack.
