In the wake of the recent murders, and feeling overwhelmed by the consistent atrocities

happening in the world, to name a few: police brutality, homophobic mass slaughter,

Trump as a presidential candidate, I take comfort in breakfast, and feeding people.

So I offer you this recipe today, so you can eat breakfast, be comforted, and feed people.

Protest Pancakes GF/DF options edit as necessary

Serves 2­4

  1. 1. Mix well in a large bowl:
  • 1 1/4 cup brown rice flour (or plain or whole wheat flour)
  • 1/2 cup tapioca flour (if using regular flour omit)
  • 3.5 tsp baking powder
  • 1 Tbsp cane sugar or honey or agave
  • 1 tsp cinnamon

2. In a small bowl whisk together:

  • 1 1/4 cup milk or milk alternative
  • 2 eggs
  • 3 Tbsp safflower/canola oil or melted butter

3: Create a donut shape with dry mixture and pour liquid into center of flour mixture.

4: Using a 1/4 cup pour batter into hot frying pan coated with oil or butter (I used coconut

oil).

5: Cover and until bubbles form on top center of pancakes, aprox 3 mins, flip pancake(s) until golden. apron 1­2 mins

6: Serve and garnish with toppings of choice, including a large helping of love.
