Cheer me up baby: GF and dairy free cookies

Cheer me up baby: Gluten Free Chocolate Chip Cookies

makes 12 cookies

1 large egg

1 t vanilla

1/4 cup of cane sugar (or other sweetener)

1/4 cup earth balance

1/4 cup ground flax meal

1 cup cashew flour (or almond) (Trader Joes sells this or ground in coffee grinder)

1/2 t sea salt

1 t baking soda

1/4 cup chocolate chips

1/4 raisons (optional)

Preheat oven to 355 degrees.

Line cookie sheet with parchment paper.

Blend in food processor, or with electric blender, egg, vanilla, sugar and earth balance.

When blended add all ingredients except chocolate chips and raisons.  Blend, scrape sides and blend again.

Remove blades and add chocolate chips and raisons, mix well.

Scoop with tablespoon into rows on cookie sheet.

Using a small sheet of parchment paper, lightly press cookies to flatter shape.

Bake for 10-12 minutes.

Slide parchment paper onto cooling rack and allow to cool.

Share with friends and enjoy!

 

GF Pecan Cookies

3/4 cup softened butter

3/4 cup sugar

1 T vanilla

2.5 cups flour (GF)

2 t baking powder

1/4 t salt

1 cup pecans

3/4 cup chocolate chips

Mix butter, sugar until light and fluffy.

Add eggs and vanilla, mix well.

add flour, salt and baking powder.

Then add chips and pecan.

Preheat oven 350 degrees.

Refridgerate 20-30 minutes

roll into shapes on cookie sheet

bake 16-18 mins

cool 10 – 15 mins

 

Rocky Road Cookies (flour less)

3/4 cup cocoa powder (Fair trade!)

3/4 cups sugar or powdered sugar

1/2 t salt

3 eggs

1 T vanilla.

3/4 cup sliced almonds

2 cups chocolate chips

mini marshmallows (vegan)

preheat oven at 350 degrees

sift first 2 ingredients

add next 3 ingredients and mix well.

then add almonds and chocolate chips.

scoop onto baking sheet with a spoon and add a few marshmallows on top of each cookie

bake for 12 minutes and then cool.
