Raw Cherry Chocolate Pie

Chocolate Cherry Pie

For the Crust

3 dates soaked in filtered water
a handful of golden raisons soaked in filtered water
2 tbs of cashews soaked in filtered water
1-1.5 cups of ground flax seed
a pinch of sea salt
1 tsp coconut oil
shredded coconut for the top
2 tbs of agave

filling:
a bag of frozen cherries (aprox 2 cups pitted)
2-3 tbs chia seeds
left over raisons and cashews from crust
2 tbs cacao
a pinch of sea salt
1 Tbs of coconut oil
2 tbs of agave

(I made crust and filling simultaneously with assistance from my five year old daughter)

For Crust
in food processor add pitted dates, salt and coconut oil, agave,
half of the raisons and most of the cashews and the ground flax seed.
add a little water from the dates and cashews slowly as you turn the food processor on. the texture should be dense and not too wet
scoop out into pie pan, pressing evenly on bottom and around edges of pie pan.

For Filling
Put all ingredients in blender with liquid from raisons and any left over from cashews and dates. let sit for a few mins to soak chia seeds.
Blend on high until all ingredients mixed well.
Pour into pie crust, smoothing with a spoon.

With a spatula press the edges of the exposed pie crust down to the edge of the filling, wipe excess away with wet fingers.
Cover with a light sprinkling of shredded coconut.

Place in refrigerator to gel for a few hours before eating.
